The drawings in this fourteenth-century model book have been the subject of extensive scholarly scrutiny since they were first published by Charles Fairfax Murray in The model book consists of eight parchment bifolios containing a total of more than seventy different illustrations. The outer bifolio functions as a cover; it bears some faint sketches and the letters SANCTVS on the outside, while on the inside of the verso of the first folio the drawing of a horse was added by a not particularly skilled hand.

Occasionally the drawings are enriched by touches of color, employed in a very restricted palette of purple, green, and red. The place of origin of the model book has been a rather contested question, with Lombardy, central Italy, and Naples all having been suggested by scholars over the years. Several pages of the model book contain multiple scenes organized in a neat, orderly manner on separate rows; other leaves are instead filled by one single large composition.

What is Balsamic Vinegar of Modena? Modena always was and is the undisputed Capital of Vinegar. Aged for even hundreds of years, Balsamic Vinegar of Modena has been the hallmark of a tradition that has been handed down from generation to generation. Obtained by grape juice must , instead of wine, that is reduced by cooking, a concentrating process, to obtain a very dense, syrupy liquid. Cooked must is placed in small barrels, where it ferments, slowly in winter, quickly in summer, causing natural concentration.

Every year the content of each barrel is moved into another, smaller barrel made of a different wood oak, chestnut, cherry, ash, juniper and others. After a minimum of 12 YEARS in barrels, the result is a very thick, rich, complex and very expensive vinegar. Solid extracts are placed in old, fired wood barrels, which have been used to age balsamic for years.
